Quick as a Flash Lunch Idea - Rainbow Wraps
It’s finally starting to feel like Spring around here; the wildflowers are in full bloom and the sun has made its appearance! Springtime always reminds me of fresh vegetables, longer (and lighter) days, and the last few hurried months before the kids are out of school.
Especially, as the days get warmer, we get a lot of requests for fast lunch ideas. When my schedule is crazy, I love to prep wraps to take with me for lunch. They’re easy, portable, crunchy, and satisfying.

Although this recipe is for a completely raw collard green wrap, you absolutely can substitute the outer wrap for a tortilla, spinach wrap, or lavosh.
Start by spreading your favorite hummus on your chosen wrap.
Next, add your preferred veggies, Some ideas include: carrots, micro greens, cabbage, bell peppers, tomatoes, radishes, cucumbers, or green beans.
I always add avocado into the mix and sometimes some sunflower or sesame seeds as well. Beans are a nice addition for an added protein punch.
Wrap it up, cut it in half, and you are ready to go!
If you like to have something to dip your wrap in, here's a favorite Tahini dipping sauce recipe::
3 cloves of garlic (minced)
2 tsp dried parsley
2 tbsp lemon juice
2 tbsp soy sauce
1/2 cup Tahini
1/2 cup apple cider vinegar
2 tbsp olive oil
1 tbsp water
Add all ingredients to blender and blend until smooth. If you'd like to thin it out, add 1 tbsp of water at a time until desired consistency. Store in airtight jar for up to a week.
